Q. Can you tell the purity of honey from its colour?

A. No. You can’t. The colour of honey ranges from almost watery white to dark, depending on the flower from which the nectar was collected.

Q. Is honey a completely natural food?

A. Yes, it is. Honey contains essential nutrients, including Carbohydrates, minerals, amino, acids proteins and vitamins.

Q. Is honey collected directly from the beehive purer than filtered or processed honey?

A. No. Honey extracted straight from beehives contains impurities like pollen, wax and dust. To make it safe for consumption, it has to be filtered and processed.

Q. Is it bad to have honey in summer?

A. No. In fact, as a rich source of carbohydrates, honey provides energy without building heat. So like glucose, it’s ideal for summer.

Q. Is it true that honey which crystallizes is not pure honey?

A. All honey will at some point turn to sugar crystals. Some other terms for it are sugared, granulation, solidifying and crystallising. This is a natural process. The crystals may be large or small, grainy, sandy type or smooth and creamy type. What makes it crystallise is due to the type of flower the honey bee visited when she gathered the blossom’s nectar. The floral source determines whether the honey will turn into a solid form more quickly or not. Some honey while raw will stay in a liquid form for quite a while. Other honey will turn to a solid form within a few weeks. This is due to how stable the sugar crystal is in the nectar This is not honey turned bad, or anything that is affecting the taste or quality of the honey. You may find you like it in this state!! It spreads on toast or bread without dripping off. It won’t run off the spoon as you take it from the jar to your hot drink. To turn it back to a liquid, pourable state, use gentle warming of the jar in hot (not boiling) water. Honey doesn’t need to be stored in the refrigerator. This speeds up the crystal formation.

Q. Is it true that the thicker the consistency, the better the honey?

A. No. The lower the natural water content, the thicker the honey. Thickness has nothing to do with the quality.

    CRUNCHY CEREAL WITH HONEY

    SERVES 1

    Ingredients
    2 tablespoons of Up! Honey
    A bowl of cornflakes
    Diced seasonal fruit
    Dry fruit
    1-cup cold milk

    Method
    Add the seasonal fruit and dry fruit to the cornflakes. Pour 1 cup milk over this and top with 2 tablespoons of Up! Honey. 


    AMERICAN WAFFLES WITH HONEY

    SERVES 2

    Ingredients
    1/2 cup Up! Honey
    2 eggs
    1-cup flour
    A pinch of baking powder
    Add salt to taste
    1/2 cup super
    1/2 cup milk
    2 tablespoons of melted butter
    1 tablespoon of oil

    Method
    Mix the eggs, flour, baking powder, salt, sugar, milk and oil to make a paste of medium thickness. Leave for 1/2 an hour. Heat waffle iron. Apply melted butter. Pour batter into it and close. Cook for 2-5 minutes or until waffles are golden brown. Remove from iron and serve hot with butter and dollops of Up! Honey.


    WHOLE WHEAT HONEY PANCAKES

    SERVES 2

    Ingredients
    3 tablespoons of Up! Honey
    1/2 cup whole wheat flour
    1-cup milk
    1 egg
    A pinch of baking powder
    A pinch of salt
    2 tablespoons of oil

    Method
    For the batter, mix the flour, milk, egg and Up! Honey. Add a pinch of baking powder and salt. Pour ladle full of batter onto hot oil in a frying pan. When the pancake is golden brown, flip and brown the other side. Top with butter and generous spoonfuls of Up! Honey.  


    STRAWBERRY HONEY MILKSHAKE

    SERVES 1

    Ingredients
    2 tablespoons of Up! Honey
    4-5 strawberries
    1 cup chilled milk

    Method
    Blend the strawberries with the honey and milk. Top with whipped cream and a dollop of Up! Honey. You can also substitute the strawberries with other seasonal fruits like bananas and mangoes


    FRENCH TOAST WITH HONEY

    SERVES 2

    Ingredients
    2 tablespoons of Up! Honey
    1/2 cup milk
    1 egg
    4 slices of bread
    2 tablespoons of oil

    Method
    Blend the egg with the milk and honey soak bread in this mixture and fry till golden brown. Spoon a generous portion of Up! Honey generously over it and serve hot.


    YOGHURT HONEY DELIGHT

    SERVES 2

    Ingredients
    2 tablespoons of Up! Honey
    Diced seasonal fruit
    A bowl of whipped yoghurt (curd)

    Method
    Add the fruit and Up! Honey to the bowl of whipped yogurt. Top with whipped cream, nuts and honey


    HONEY CINNAMON BUTTER

    SERVES 2

    Ingredients
    1/4 cup Up! Honey
    1/4 cup butter
    1/4 tablespoon of cinnamon

    Cream the butter, honey and cinnamon spread on hot toast or serve with pancakes.

    Honeybees use nectar to make honey. Nectar is about 80% water with some complex sugars. If you have ever pulled ahoneysuckle blossom out of its stem, the clear liquid that comes out of the stem is nectar. In Ghana, bees get nectar from flowers such as dandelions, sunflower, berry and fruit tree blossoms. They use their long, tubelike tongues like straws to suck the nectar out of the flowers. This is then stored in their “honey stomachs”. Bees have two stomachs, their honey stomach which they use like a nectar storage and their normal stomach. When full, the honey stomach holds almost 70 mg of nectar and weighs almost as much as the bee. Honeybees visit up to 1500 flowers collecting nectar to fill their honey stomachs.

    The honeybees return to the hive and pass the nectar onto other worker bees. The worker bees use special enzymes to break the complex sugars in the nectar into simple sugars. This ensures it is both more digestible for the bees and less likely to be attacked by bacteria while it is stored within the hive. The bees then spread the nectar throughout the honeycombs where water evaporates from it, making it a syrup. The bees fan the honey with their wings to dry it faster. Once the honey is thick enough, the bees seal off the cell of the honeycomb with wax. The honey is stored and never goes bad until it is eaten.
